Stir Fry Recipe!

I had the most wonderful evening tonight you guys!

First surprise – my Boo got home earlier than I expected so that was obviously super awesome.  He was really tired on account of not having slept well the night before (we had a crazy storm here in Denver that was reminiscent of that scene in Home Alone right before the power goes out), so extra bonus – we curled up for a bit and had an impromptu afternoon nap!  I wasn’t particularly tired, but any excuse to curl up next to my bae and just be still for a bit, um yes I'm here for that.

 

One of my favorite things in the world is to cook him dinner. 

I don’t know what it is about the whole shindig, but I live for it. 

I love creating amazing food that is healthy and beautiful and feeding it to my special guy.  Also it’s kind of fun experimenting and surprising him with my latest science experiment lol.  There’s nothing this guy won’t eat, so my job isn’t too hard!

Tonight’s menu called for a very simple stir fry that was both easy, quick, and stupidly satisfying.  I am a subscriber of FLO28 – a cycle syncing membership that basically helps you live your life according to where you are in your cycle and harnessing your sexiness at all times of the month.  It’s a life changer for sure!  More on that in another post, but tonight’s stir fry recipe came from FLO28. 

I modified it a bit as I was missing some ingredients, but it was still so awesome!  One of the best parts of the FLO28 membership is that they give you meal plans for every single meal for every phase of your cycle!  I happen to be menstruating this week, so this dinner is complete with the foods that are appropriate for this time in my cycle, that will give me the micronutrients I need from bleeding this week.

This concept of eating for your cycle might seem cuckoo nuts crazy to some of you, but it’s a pretty incredible concept that I promise to dive into in another post!  For now, here’s the recipe!


Turkey & Veggie Stir Fry

**indicates modification from original recipe 

 

1 lb ground turkey

3 carrots, shaved

2 red bell peppers, diced

8 oz cremini mushrooms

**1 cup green beans

**1 cup peas

**1 bunch scallions

3-4 oz spinach

 

(original recipe called for water chestnuts and broccoli and no scallions, but the scallions were looking sad and needed to be eaten so there ya go)

 

Dressing:

Juice from 2 lemons

3 TBS tamari

3 TBS tahini

S & P

 

**1 cup wild rice (see note below)

 

Directions:

Prep veggies and set aside til you are ready for them.  Brown your turkey in a skillet and set aside.  Saute the veggies in a bit of coconut oil and a splash of water to gently wilt them, 5-7 minutes.  Remove from heat.  Toss everything together in a big bowl with the cooked rice.  Add your dressing ingredients at the very end and serve! 

 

 

Bonus tip for cooking your rice!  Yay this is so exciting because it is SUCH an easy tip and it gives you a punch of micronutrients without being a huge hassle!  When you put the water and rice together in the saucepan, add a strip of kombu also.  Kombu is a type of seaweed, specifically kelp.  Seaweed is packed with a crazy amount of nutrients including iodine (important for thyroid and breast health!), calcium (hello bone health!), and iron (blood building, what what!!).  The hot water with the rice will leach out the nutrients from the kombu and get all that goodness into your rice so you get an extra punch of healthful benefits!  When it’s all done, take out the kombu and throw it away.  Very little work for a ton of extra benefits! Yesss.

 

And that’s it!  It was so easy to throw together and so delicious.  Also a plus, there were lots of leftovers for lunches this week.
